Wow! I can't believe it! Only a few days before christmas and I seem to be totally prepared. Since the world didn't end last night we are going to celebrate today by going ice skating and possibly going to see 'wreck it ralph' if there's enough time. With the days growing shorter I feel like a crazy person tring to get everything done before it feels like bedtime. These days, since adding the chickens, life has become even more hectic, but totally rewarding! On a visual sense anyways! My girls have been slackers. I don't know if it's the cold weather, shorter days or if they just really don't feel like laying right now but they aren't budging in the egg department.
We did finally finish the coop, painted it a bit, hung up some flower pots using string (thanks ikea) and added a few new girls (i hope) to our flock this week.

the chickens are a huge delight to have around and I find myself distracted constantly and lose time just sitting and watching. They are such interesting little ladies!

we did manage to get one egg last week! It went right into our batch of grinch cookies (recipe below), We also made Carmel chex mix!

Grinch Cookies
Prep time:  5 mins
Cook time:  8 mins
Total time:  13 mins 
Ingredients
  • 1 pouch (1 lb 1.5 oz) Betty Crocker® sugar cookie mix
  • ½ cup butter or margarine, softened
  • 6 to 8 drops green food color
  • 1 egg
  • ¾ package Andes Mints
  • 1 cup semisweet chocolate chips
Instructions
  1. Heat oven to 350°F.
  2. In large bowl, stir cookie mix, butter, food color and egg until soft dough forms.
  3. Stir in chopped Andes Mints and chocolate chips.
  4. Using small cookie scoop or teaspoon, drop dough 2 inches apart on ungreased cookie sheet.
  5. Bake 8 to 10 minutes or until set.
  6. If your oven runs hot, then check them at 6 minutes.
  7. Cool for about 3 minutes; remove from cookie sheet to wire rack.
  8. Store tightly covered at room temperature.
Here's Pearl, laying our first egg! She went back and forth from the nesting box to back in the yard so many times before anything happened. I actually left to pick london up from school, got home and as soon as we walked up to her we heard a loud PLOP! How thoughtful of her to wait for us ;) If the chickens are teaching me anything at all, it's patience. ;)

London had an interesting week. He was the lead in the school play 'red headed robbies christmas story', lost his 2nd front tooth, got his first pair of wellies (becoming quite the chicken farmer), and a haircut (his dad pushed for that one)

and the weather is finally cool enough to wear my chunky knit scarf from Deroucheau, I've been anticipating it for some time now and the color and comfort is everything I dreamt it would be!
